Whenever an eye is open, aim for it. When the body falls a bit, get closer and you'll be able to climb on top of it to trigger an attack by Leon. This area is pretty big, so use it to your advantage if you need to. He'll occasionally do a stampede attack, which means he'll be running at you at a faster speed than normal; watch out for that.
